Export Service application performs mainly as an adjunct to the Accounting Export module. It runs in the background, polls the database and looks at the ExportJobs table in the SiriusSQL database. When manually executing a job with Execute rather than Preview in Accounting Export module, the Export Service application is creating the export file.
